I lived in Egypt for a year. I experienced some of the problems you discuss. I also had incredibly generous, wonderful interactions with people. What I came to learn is that I walk into Egypt as a person with a tremendous amount of privilege. And what I came to like about the Egyptians is that they knew this, and refused to let me expect some cheap "third world" holiday at their expense. ie, if someone brought me and my companion food while I waited at a train station in America, I would expect to pay about $50 (or at least haggle them down to $30-$40). In Egypt, the tourist workers often don't see why they should charge less than what you're used to paying at home. They know exactly how much your money converts to in their currency.

Egypt doesn't let Western tourists bend them over and take whatever they want for cheap. And I think it's pretty skewed to characterize them as selfish or unkind because of that.
